For two plates of hummus:
1. Soak the chick peas for 8 hours (or overnight).
2. Cook them in slowly boiling water for 3 hours.
3. Peel the peas and mash them with a fork (or in a food processor), but save some whole for decoration.
4. Add tahini, lemon juice, and salt. If you prefer a softer consistency, then add some of the water in which the chick peas were cooked.
5. Spread the hummus on two plates. Decorate with paprika powder and whole cooked chick peas.
6. Pour olive oil on top and serve with pita bread.
