Lussekatter

These buns are made first on the 13th november, the day of the queen of light, Saint Lucia. A maiden in white night gown comes with light on her hair and a tray filled with Lussekatter and warm koffee singing the song "Sankta Lucia". Even in the office we start the day with the celebration.
To make the buns you take your best saffron bread recipe and shape the bread like in the picture. Use raisins to top the curl of the figure of 8, rather the symbol of eternity.

Glögg

Take one liter Ribena (black current cordial) and a bottle of Claret. Boil the cordial with 5 inch stick of cinnamon, 20 cardomoms, 20 cloves and add the wine at the end so that it warms up without evaporating the alcohol. Serve it with slivered almonds and raisins which you serve yourself. If you want it stronger you may mix with some  strong alcohol.

Thursdays special

On thursdays you find in every lunch restaurant this speciality:

Ärtsoppa och pankakor (yellow pea soup and pancakes)

Soak yellow peas overnight and cook them with a salted leg of pork. Season with thyme and lemon juice.

Serve pancakes with whipped cream as a dessert. Strawberry jam to go with.
