Swedish meat balls with tranberry jam (köttbullar och lingonsylt)

Dark sweet rye bread (Dansk råg bröd), crispy wholemeal wafers, white bread with margarine or butter

Home made black current cordial (Svart vinbärsaft),

Snaps (Absolute Vodka/dry black current liquor or any spirit with about 40 % alcohol)

Inlagd sill and boiled new potatoes

In Sweden it is essential to have pickled herrings called Inlagd Sill and cooked new potatoes garnished with dill on the midsummer meny. But pickling salted raw herrings in a vinegar base or a mayonnaise base is not everyones delight. It is fishy and the smell is difficult to get rid with. So if the ABBA bottled Sill is available in your supermarket please try it. It is quite an experience the first time you eat it.

 

The most essential in a Swedish feast is the snaps. The bottle is chilled for about half an hour in the freezer compartment so the liquor is thick when poured into small 3 cl glasses. The guests, even the females, pour the liquid direct into the throat with the head tilted backwards, after saying "skål" of course. Skaal is "cheers" in Swedish. This is one of the few Swedish traditions I could never imagine adjusting myself into. Ladies! use cider or white wine as fake snaps.

Swedish Meat Balls
(Mamas köttbullar) meaning mother´s meat balls

They come in different sizes
but I prefer the small ones
for they seem tastier though
made from the same base.

You need:
250 g ground beef
250 g ground pork
30 ml grated onion
1 large egg
1 dl single cream
1 dl bread crumbs
soaked in the cream above
salt and peppar
about 2 dl oil to fry

Mix thoroughly all the ingredients and leave aside for at least half an hour. I use the mixer with the knife. Make balls about 2 cm diameter and fry in an iron griddle a few at a time.
(Tips: Taste one and adjust seasoning before continuing with the rest.)
How much oil you use is a matter of choice; I use about 1 millimeter deep layer for the first batch and then I do not use any at all. Serve with tranberry jam. You can make a fake Tranberry jam using not too riped Red Currents. Please note that the Swedish jams are called sylt and are runny like a thick sauce – not "settled" like the english jams.

Semlor

To mark the beginning of spring these goodies shows up at the confectioners, sometime in April but you may be able to find it in the southern Sweden at anytime of the year.

Bake whole meal buns with your favourite bread recipe. Cut a lid, scoope out the middle and fill with ground almond mixed with icing sugar and double cream to make a buttercream consistency paste. Pipe around the top with a startip stiffly beaten double cream. Put the "lid" on and sprinkle with icing sugar. Please see the picture.
